Pesto (courtesy of Sandy)
2 cups fresh basil leaves, packed 1/4 cup grated Parmesan cheese 1/2 cup Olive oil 3 tablespoons pine nuts or walnuts (optional) 2-5 garlic cloves, finely minced (it's up to you how many cloves you like, in my case medyo madami nilagay ko coz I like garlic) Put all the ingredients in a food processor and whip until everything's well chopped. Mix until well blended. set aside. Saute garlic, 1 can chunk tuna light in water (drain the water) & 1/2 can of 13.5 oz. mushrooms (pieces & stems) on olive oil. sprinkle a pinch of salt & ground black pepper and keep on stirring for 2 minutes until it's done. serve on a plate of spaghetti pasta, add the pesto sauce and voila! Note: The pesto sauce can be kept on a freezer for months.
